Çäkçäk, frequently anglicized as chak-chak, is a Tatar sweet. It is particularly popular in Tatarstan and Bashkortostan, and is recognized as Tatarstan's national sweet in Russia. There are different ways to cut the noodles for this cake and also different recipes on how to make them. Each culture will have its own recipe. In some countries they call this cake "noodle halva" because of the sticky honey syrup that is used in making it and will resemble some what a taste of Baklava. Chak-Chak For the noodles you will need: 450g-500g(17.6oz, 3cups) all purpose flour 5 large eggs ¼ tsp salt ¼ tsp baking powder 1 tbsp heavy cream(could be substitute it for 1 tbsp of powdered milk) oil for frying and 2 tbsp clarified butter. Method: In a large mixing bowl add 5 eggs and whisk them to smooth texture. Add salt, baking powder and heavy cream and mix. Gradually add flour, first combining it with whisk, then wooden spoon, then move on to kneading it by hand. Dough should be soft but not runny. (I used 450g of flour from total amount ,leave the rest for dusting and rolling out the dough) In some cases more flour needed so follow instructions in the video. Line large baking tray with paper towel for the noodles to absorb extra oil after being fried. You may chose the second method of cutting noodles. It is easier and not as time consuming. For the honey syrup you will need: sugar 200g(1cup) honey 250g(1¼ cup) water 80g(1/3 cup) Method: Combine sugar and water and mix. Bring to boil and boil for 3 minutes. Add honey and mix. Only bring to boil and turn heat off. Your sugar syrup is ready. You need to pour it over noodles while it is still hot. Form cakes. Let set for couple hours. Cut and enjoy! Thank you for watching! The famous sweet of Turkic peoples is tasty and fluffy chak-chak in a golden honey-caramel sauce for your festive table or evening tea with your guests. ✅ Ingredients: • 5 eggs • flour – 11 oz /330 g • honey – 7 oz /200 ml • sugar – 3 oz /100 g • baking soda – 1 tsp • salt – ½ tsp • vegetable oil – 4 cup /900 ml • lemon juice – 1 tsp ✅ You will need: • bowl • rolling pin • pan • colander 📙 Preparation: 1. Divide the yolks of 2 eggs from whites. Beat 3 eggs and 2 yolks until stiff peaks. 2. Add the beaten eggs, salt, soda and lemon juice into 10 oz /300 g of flour and knead the dough well, it should be fully incorporated and smooth. 3. Leave the dough to rest for 30 minutes. 4. Divide the dough into 4 parts, roll each till 2-3 mm thick and cut into small strips. Flour all the strips. Before frying lay all the strips into colander and toss to remove extra flour. 5. Heat the vegetable oil and fry the strips by several parts until golden for about 1-2 minutes flipping constantly. 6. Melt the honey in a pan, add the sugar and keep melting stirring constantly until smooth. 7. Pour the honey syrup onto the fried dough strips and combine neatly. 8. Lay out the chak-chak strips on a dish with wet hands and form a pyramid. Put your chak-chak into a cold place for an hour.

In this video, I’m going to show you how to make the most amazing dessert from Tatar cuisine called chakchak. Chakchcak has been the most popular sweet dish in my culture for ages. It’s considered a pretty fancy dish in Tatar cuisine, as it may take a couple of hours to fully make it. So people would mostly make it for weddings, cultural events like Sabantuy or for other special occasions. The recipe has 4 main parts to it: - Making the dough - Cooking the dough - Making syrup - And mixing everything. Let’s start with the dough. We will need: - 2.5 cups of all purpose flour - 2 eggs (both yolk and white parts). Chilled, right out of the fridge - 2 egg yolks - a pinch of dry yeast - Little bit of ice cold water - 1/2 teaspoon of salt - 14 oz of honey - 1 cup of white sugar 1. Bring together two eggs and 2 egg yolks in a bowl and mix them with a mixer until you see little bubbles on the surface 2. Sift your flour and gradually add it to the egg mix 3. Add a little bit of ice-cold water, as you are mixing everything 4. Add a pinch of yeast and salt 5. Knead the dough until it becomes smooth. It may take up to 20 minutes if you knead by hand. 6. The dough has to be stretchy and it shouldn’t stick to your hands 7. When the dough is ready wrap it in plastic and put it in the fridge for 30-40 minutes 8. Once it’s chilled, take it out and cut the dough into 4 quarters. 9. Shape a little ball out of each quarter and roll out the dough into 0.02 - 0.03 inch thick sheets. 10. Cut a sheet into a half-inch wide strips using a pizza cutter or a knife 11. Now cut each strip into thin short noodles. You can combine a couple of strips and cut them at once. Just make sure to dust them with flour so they don’t stick together 12. In a medium pot pour some oil, enough to cover half of the batch we made. 13. Let the oil heat first. Throw in a piece of dough. If the oil bubbles up and the dough swims up on the surface, the oil is ready for cooking 14. Put the noodles in the oil and stir, helping them come up to the top 15. You may want to start preparing your next quarter of the dough while the noodles are frying. However, don’t forget about them and stir them occasionally so they fry evenly 16. As soon as the noodles turn golden brown from both sides, transfer them into a deep bowl with a piece of paper towel at the bottom to get rid of the excess oil When all the noodles are fried, start making your syrup. 17. In a small pot, heat up your honey 18. Add sugar to it 19. Cook the syrup on medium heat by constantly stirring it, until it starts boiling 20. Make sure you don’t overcook the syrup. It’s not supposed to turn brown. Otherwise, you will get lollipops, not syrup :) 21. You can test it by dropping a little drop of syrup in cold water. Then pull out that drop and try to roll it into a little ball. If it smears between your fingers, the syrup is not ready yet. If it’s rolling into a ball, it’s ready 22. Pour the hot syrup onto the fried noodles 23. You can start mixing everything in the bowl. And then I recommend transferring it onto a flat surface, as it will be easier to mix everything making sure that the noodles get soaked in syrup. Otherwise, the syrup has the tendency to settle at the bottom of the bowl, if not mixed properly. The syrup may still be hot. That’s why constantly wet your hands in cold water and keep mixing. Water will also keep the noodles away from sticking to your hands 24. When you feel like everything is well mixed, start pressing the noodles together, shaping a round pyramid. Press it well, so the noodles stick together and don’t fall apart 25. Allow the chak-chak to sit in a room temperature place for a couple of hours, letting everything stick together #CHAKCHAK #dessertrecipe #sweetrecipe

Caramel chak-chak recipe. -3 eggs -3 tsp of sugar -about 2,5 glasses of flour (it depends on how big or small are the eggs) -veg. oil to fry -caramel or honey Hamiri oddiy, ko'rinishi muhtasham chak-chak tayyorlash. Karamelli chak-chak retsepti. Yoshligimizda kattalar chak-chak pishirishsa, biz hamirdan har hir shakilli chak-chaklar tayyorlar edik. Bugungi retsept yoshligimdagi retseptlardan biri. Hamiri tuhum, shakar va undan iborat. Hech qanday ortiqsa mahsulot, ortiqcha ovvoragarchilikka kerak yo'q. Men bilgan eski chak chak retseptining hamiri shu. Shaklini hohlasangiz somoncha, kubik shaklida kesishingiz mumkin. Lekin men biroz yangilik qildim. Asal o'rniga karamel ishlatdim, shaklini esa bolajonlarga yoqadigan shakilda pishirdim. Umid qilamanki sizga ham manzur bo'ladi 😊 -3 dona tuhum -3 choy qoshiq shakar -2,5 stakan un (tuhum katta yoki kichikligiga qarab solasiz unni) -qovurish uchun o'simlik yog'i -Karamel yoki asal - Узбекская кухня.
